Bison Cooking Tips

Since bison is lower in fat than other red meats, it can be easy to overcook. Expect a bison steak to cook one-third faster than a beef steak. Use a meat thermometer for best results.

  • Steaks are best when cooked medium rare (145°F) to medium (160°F) to maintain the moisture and flavor of the meat
  • Ground bison meat should be cooked to an internal temperature of at least 160°F
  • Oven temperature should be around 275°F for a roast. The roast will be done in about the same amount of time as a comparable size beef roast
