The cost of bison meat comes with good reason, as there are several factors that determine it:
- Bison are fewer in numbers than cattle and are more expensive to purchase initially
- Bison takes about twice as long as cattle to mature, therefore it is more expensive to raise them
- Due to their strength and mobility, bison requires a larger and stronger (i.e. more expensive) handling facility
- There are no growth hormones or steroids given to bison to hasten their growth
Bison meat has excellent value. In addition to the health benefits over other meats, the lack of fat in each cut means less of the weight you pay for is cooked off or discarded. Bison is a nutrient dense meat, which means it satisfies more while eating less.
